Chilli con carne

Chilli con carne done, served with rice.

Easy and filling, chilli con carne will become a family favourite.

What you need

500 g minced beef
1 large onion, chopped
3 tablespoons oil or 2 tablespoons lard or drippings
2 cans tinned chopped tomatoes (400 g can)
1 can red kidney beans, rinsed and drained (400 g can)
1 teaspoon salt
1/2 teaspoon chilli powder

How it is done
  1. Heat oil in a pan over medium heat and sauté the onion for 5-6 minutes.
  2. Add beef and brown for 3-4 minutes.
  3. Add tomatoes, beans, salt and chilli powder.
  4. Cover and simmer for 20-30 minutes.
Notes

Serve chilli con carne with long grain rice.

To use dried beans, soak 150 g dried red kidney beans overnight and then rinse, place them in a pan, cover with water, bring to the boil and simmer for 1 hour, or until beans are tender.

Optionally, add 1 green bell pepper, chopped and cook with the onion.

The leftover chilli powder coan be used to flavour soups and stews o mix more minced meat meat with dried chilli to make spicy burgers.

Variations

Do a white chilli con carne with turkey mince and white beans.
